You got me at the sea urchin pasta. One of the great dishes of all time, especially if little is added to the sea urchin. My favorite was truffle butter from D'Artagnon, sea urchin from Catalina Seafood, and chopped butter poached lobster, and a little Vermont creme fraiche. I can;t wait to taste yours.
